Happy Father's Day!
First and foremost, I'd like wish a very happy day to all the daddys out there! Today my boys and I worked on part #2 of our Father's Day projects. Part #1 was a little mini photo session of the boys so he could have updated pictures for his office.
Our Andrew is a man of pattern and routine... and he has taken to having the same breakfast every morning. He makes up a bulk batch of these breakfast burritos. This is usually a chore he takes care of himself, sometimes with my help. As a little Father's Day project, the boys and I decided that we'd get to cooking this morning and make up a batch for him! So, Andrew, you can just scratch that off your to-do list for this weekend!
The boys had an absolute ball working in the kitchen. Admittedly, between the hot stove and the many, many eggs, I was a bit nervous! haha

All and all, we were pretty pleased with our results. Tristan gave it two thumbs up!

And here's the recipe for anyone who'd like to give it a try! It's a pretty simple recipe and easily adapted to your tastes! Switch it up by adding more veggies, or cheese, or anything you like really!
Bulk Breakfast Burritos
Makes about 30
Ingredients
2 dozen eggs
2 cans black beans (drained and rinsed)
1 can corn (drained)
1 jar tomato salsa (doesn't really matter what brand, but Andrew like Chi Chi's HOT!)
1 jar Newman's Own Black Bean & Corn Salsa
30 8-inch tortilla shells (we use whole wheat)
1. Start by scrambling the eggs in the way your normally would for scrambled eggs.
2. Combine the scrambled eggs and the remain ingredients (except the tortillas) in a large bowl.
3. Fill each tortilla shells with about 4 Tbsp of your mixture. Roll up burrito style.
4. Line your burritos up on a cookie sheet. Place the cookie sheet in the freezer. Once the burritos are frozen you can toss them all in a freezer bag. Then you can just grab one each morning!
5. Andrew heats his wrapped in a paper towel for about 2 1/2 minutes in the microwave, flipping it over about half way. It's a good idea to let it set for a minute before eating as the filling will be pretty hot!
